The Salad Meal Recipe

Ingredients

  • 200g pre-packaged salad mix
  • 1 medium tomato, diced
  • 1 cup cooked and cooled cracked freekeh*
  • 1/4 cup dried currants
  • Goat’s cheese^
  • 1/3 cup roasted mixed nuts and seeds¹
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Cracked pepper

Instructions

  1. In a large bowl or serving dish, add salad mix, tomato, cooked freekeh and dried currants.
  2. Toss lightly to combine.
  3. Top with roasted nuts and crumbled goat’s cheese.
  4. Drizzle generously with extra virgin olive oil and balsamic vinegar and finish with cracked pepper.
  5. Divide between plates and enjoy.

Notes

*Freekeh is an ancient whole grain that is harvested while still young and green. You can substitute with cooked rice, quinoa or other grains.

^Goat’s cheese can be substituted for feta or ricotta.

¹This can be a mix of any nuts and seeds that you enjoy. Cashews, almonds, walnuts, pinenuts, sunflower seeds and pumpkin seeds all go well in this salad.
